My supervisor has mentioned Wom Kim’s Peach Pudding at Hyde Park Bar and Grill over and over as one of her favorite desserts. Someone always brings in a dessert for a co-worker’s birthday in our department, so I googled peach pudding recipes and found one that was supposedly similar to that of Hyde Park Bar and Grill’s. Whether it is or not, I wouldn’t know, but it was golden with crispy edges, warm and comforting, sweet and delicious. Below is a slice I set aside at my desk to save for dessert at home, with the photo taken with my iPhone.

PEACH PUDDING CAKE
- Spray a 9×13 inch baking dish with cooking spray and set aside.
- Preheat oven to 350 degrees.
- If you don’t have buttermilk on hand, which I don’t since I always bake with unsweetened soy milk, measure out 3/4 cup soy milk and mix with 3/4 teaspoon apple cider vinegar and set aside until ready to use. Otherwise, use 3/4 cup buttermilk.
- Another substitution I made was instead of fresh peaches, I used Dole brand peaches jarred in fruit juice (not syrup), drained and rinsed the peaches and set aside until ready to use.
- In a medium bowl, sift together 1 3/4 cup plus 2 Tablespoons flour with 2 1/4 teaspoon baking powder, 3/4 teaspoon kosher salt, and 1/2 teaspoon baking soda. (I used half unbleached all-purpose flour and half whole wheat pastry flour).
- In a large mixing bowl, place 3/4 cup Earth Balance margarine and mix until creamy.
- Gradually mix in 1 3/4 cup sugar.
- Beat in 2 Tablespoons vanilla extract, then 2 large eggs – 1 at a time, mixing well after each addition.
- Using low speed, mix in flour mixture alternately with buttermilk in three additions each, mixing well after each addition.
- Pour batter into baking dish and smooth evenly.
- Arrange 4 cups of peeled, sliced peaches over the batter, overlapping as necessary.
- Spray sheet of foil with cooking spray and tightly fit over the dish.
- Bake for 45 minutes.
- Remove foil (some cake may stick).
- Continue baking until top is golden, edges are crusty, and knife inserted in center comes out clean (about another 40 minutes, though mine only took an additional 25 minutes).
I served this the next day after reheating in the oven in our staff lounge for about 20 minutes, topped with sweetened whipped cream. Mmmmm…. it would be yummy with a warm caramel sauce or rum sauce as well. Yum!
